Mudcake cupcakes with chocolate frosting

Mudcake cupcakes

Makes 8 cupcakes

65g flour
20g cocoa powder
3/4tsp baking powder
1/4tsp salt
100g sugar
1 egg
75g natural yogurt
60g oil (unflavored, I used rapeseed oil)
1tsp vanilla extract
60g hot water
60g milk chocolate chips

Preheat the oven to 150°C. Sift the flour, cocoa powder, baking powder and salt. Whisk the sugar and egg with a hand whisk. In a separate bowl, mix together the yogurt, oil, vanilla and hot water. Pour a little of the egg mixture and yogurt mixture into the flour mixture and mix by hand until combined, then add again of both mixtures and mix. Keep doing this until you have a smooth batter. Add the milk chocolate chips to the batter. Using two spoons or an ice cream scoop, fill cupcake liners 3/4. Bake in 150°C for about 20 minutes.

Chocolate frosting

100g milk chocolate
1tbsp cocoa powder
1tbsp hot water
150g butter
60g icing sugar
100g natural yogurt

Melt the chocolate and set aside to cool. Mix together the cocoa powder and hot water to form a paste. Using an electric mixer, beat the butter until light and fluffy. Add the icing sugar and continue mixing. Add the cocoa paste and mix, then add the yogurt and mix until combined. Lastly add the melted and cooled milk chocolate and mix until combined. Pipe, scoop or use a spoon to frost the cooled cupcakes and serve.
