Macadamia and White Chocolate Chip Cookies

150g butter
100g sugar
110g dark brown sugar
splash of vanilla / 1 tsp of vanilla sugar
1 egg
1 egg yolk
240g flour
0.5tsp salt
1tsp baking soda
70g roughly chopped macadamia nuts
200g white chocolate chips

Preheat the oven to 190 degrees celsius. Cream the butter and sugars. Add a splash of vanilla (about 1tsp). Mix together the egg and egg yolk with a fork and add into the batter. Keep beating the batter. In a separate bowl, mix together the flour, salt and baking soda. Start adding the mixture into the butter mixture slowly, mixing at the same time. Once 3/4 of the flour mixture has been added, mix in the macadamia nuts and white chocolate chips. Once incorporated, add the rest of the flour. Form balls of the cookie dough and press slightly against the baking paper to form a thick disk. My cookies weighed around 57g each. Bake the cookies in 190°C for about 10 minutes. Then take out of the oven and let cool on the baking tray. Serve once hardened a little.
